Peasant Bistro Welcomes Executive Chef Hays

Russell Hays has joined Peasant Bistro as Executive Chef. Located in downtown Atlanta across from Centennial Olympic Park, Peasant Bistro has quickly become a favorite of savvy Atlantans and visitors looking for a chic downtown dining experience. With impressive culinary experience and creativity, Chef Hays will continue to raise the bar on the fine cuisine at Peasant Bistro.

Most recently Sous Chef at Joel restaurant, Buckhead, Chef Hays’ roots in the Atlanta culinary scene run deep. After receiving a degree from the Atlanta School for Culinary Arts, he headed to Paris, France to apprentice at the three-star Michelin restaurant Guy Savoy. After several months there he began his Atlanta career working with the Buckhead Life Restaurant Group at 103 West.

Chef Russell accepted an offer from Brasserie Le Coze in Buckhead where he worked at several stations. After a few years there Russell was lured across the street to the Ritz Carlton-Buckhead by the Executive Pastry Chef Frederic Monti, where he learned the art of a pastry chef as well as being Garde Manger and Banquet kitchen manager. Hays was tapped by Ritz Carlton to be on the opening teams for Ritz Carlton Sarasota and Ritz Carlton Reynolds Plantation.

In 2003 renowned chef Joel Antunes lured him to Joel in Buckhead as Event Chef, and he also oversaw ordering of weekly import shipments from France. After two years at Joel, Hays became Sous Chef at Murphys and was on the opening team of Trois, two Concentrics restaurants. He then returned to Joel as Sous Chef.

The experience Chef Hays brings to the Peasant Bistro as Executive Chef will assure long time followers and newcomers to Atlanta the quality, originality and fine cuisine that the Peasant Group signifies.
