Yves Samake, executive chef at The Ritz-Carlton, Atlanta, creates a four-course dinner menu of African dishes paired with South African wines in honor of Black History Month. The menu will be offered Friday and Saturday evenings in February, except February 13 and 14, in Atlanta Grill at The Ritz-Carlton, Atlanta.
Chef Samake's repertoire of African recipes derives from his own family history. His father immigrated to France from Mali, South Africa, and his mother mother, an accomplished Parisian cook, learned to make a variety of African dishes. Young Yves began his lifelong interest in cooking and cuisines at her side.
The four-course dinner menu will showcase dishes from Senegal, and each course is paired with South African wines selected by Sommelier Silvio Garcia. The cost is $78 per person without paired wines, $108 per person with paired wines, exclusive of tax and gratuity.
